High-protein comfort food doesn’t get much better than a cheesy butter bean stew. Kavli Whipped Cheddar & Chorizo brings the rich cheddar flavour to the stew, pairing perfectly with the tangy tomato and green basil pesto flavours. The perfect cosy autumn or winter warmer dinner.
Ingredients
200g cooking chorizo
2 x 400g chopped tomatoes 2 x 400g drained butterbeans
X1 onion, finely chopped
X3 garlic gloves, chopped finely/crushed
X3 tablespoons paprika
X1 tablespoon mixed herbs
To Serve:
130g green basil pesto
x1 tub Kavli Whipped Cheddar & Chorizo
Sea salt & black pepper to taste
Method
Slice the chorizo and tip into a large saucepan over a medium heat. Fry gently for 5 mins or until starting to turn dark brown.
Add the chopped onion and garlic.
Add the tomatoes and butter beans, bring to the boil, then simmer for 10 mins.
Swirl through the pesto, season lightly and dollop the Kavli whipped Cheddar and chorizo.
