Ingredients
125g of asparagus
Handful of baby spinach
3 baking potatoes (around 800g), peeled and grated
2tbsp of butter
2tbsp of olive oil
Salt and pepper (to taste)
x1 tub Kavli whipped cheddar & chorizo
Add grated potatoes to a kitchen cloth, squeeze out as much liquid as possible and add them into a large bowl
Toss in 1tbsp of olive oil, 1tbsp of butter, salt and pepper, and mix well
Bring a large pot of salted water to a boil, and set a bowl of ice water nearby
Prepare the asparagus discarding any tough, woody ends and drop them into the boiling water for about 1 minute, until tender but still bright green
Transfer the asparagus from the pot to the ice water, and let it chill for 1 minute, drain and pat dry
Add 1tbsp of olive oil and 1tbsp of butter to a preheated no-stick frying pan
Add the potatoes and gently press them with the spatula (forming a pizza shape)
Cook for 15 minutes per side on medium high heat or until golden brown
Top the potatoes pizza with Kavli whipped cheddar & chorizo, cooked asparagus and baby spinach
